Vegan St. Patty's Day

Hey guys! How's it going out there? I'm doing awesome! I hope you are as well!

I have a fun recipe for you guys today! We have a fun holiday coming up on Saturday, and as Irish as I am, I must say that I love St. Patty's Day! Last year, Keenan and I went pub hopping in Bremerton.

Anyway, this may not be my first St. Patty's Day as a vegan, but it is my first as a food blogger. St. Patty's Day is generally ruled by the corned beef crowd, but it doesn't have to be! When I started looking for meal ideas for the holiday, I actually began by searching out vegan corned beef alternatives. Honestly, nothing out there really looked appealing. I'm not the biggest fan of meat alternatives, and foods like seitan are still far out of my cooking repertoire. Instead, I have a delicious St. Patty's day entree for you guys that is totally meat-free, meat alternative-free and still very traditionally Irish!

Vegan Colcannon

Ingredients

  • 1/2 head green cabbage
  • 3 Russet potatoes
  • 2 handfuls kale
  • 2 leeks
  • 1 cup almond milk
  • 1/2 cup Earth Balance
  • 1 can cannellini beans
  • salt and pepper to taste

Directions

1. Slice your 1/2 cabbage in half again and place it in a large sauce pan. Wash and quarter the potatoes, and place them in the pan as well, along with the kale. Cover everything with water and a bit of salt, and bring it to a boil. Reduce to a simmer, and allow to cook until everything has become soft.

2. Slice the leeks, including the green, as well as the white part. Add to a small sauce pan with a cup of milk, and allow to simmer until the leeks are softened.

3. Add the leeks to the rest of the veggies, and add the can of beans as well, after rinsing them. Season with salt and pepper to taste, then blend everything together using a hand mixer.

4. Transfer to a serving bowl, and enjoy!

Totally Irish, and totally good! It's not very often that you find a dish that traditionally contains kale! It definitely made me happy! It's so creamy that it's hard to believe it's vegan!

I included extra protein, in the form of white beans, in order to make this dish a complete meal. Roasted carrots would make the perfect side dish if you wanted to add extra veggies and color!

Oh, and in case your St. Patty's Day plans involved heading down to your local pub, just remember that Guinness is not vegan! It contains gelatin (animal bones), isinglass (the swim bladders of fish), milk proteins, and albumin sourced from eggs and dried blood powder. (source)

Instead, maybe try some local microbrews! Microbreweries are popping up everywhere these days, and I'll bet if you look that you can find one close by! Their beers are usually fabulous, and you're also helping to put money back into your community by drinking local!
